Eleven ﬁber-rich substrates were subjected to in vitro incubation with fecal bacteria and fermentation and SCFA production were measured (15). Citrus pectin was 83% fermentable while oat ﬁber was about 6% fermentable. SCFA production was correlated to fermentability in the in vitro system. In a similar study (16), the most rapid fermentation rate was with pectin followed by psyllium gum, tragacanth gum, guar gum, soy ﬁber, and ﬁnally cellulose.
